What defines the composition of hawthorn concrete?

It is an aqueous fruit concentrate whose identity markers are organic acids (malic / citric acid, total acid), soluble solids (Brix), and total flavonoids (e.g., vitexin / hyperoside-type) — the characteristic hawthorn fruit-acid / fruity / slightly astringent profile. Top fingerprints total acid + Brix + total flavonoids as authenticity/quality markers (adulteration with sugar-water or other fruit concentrate is screened by the acid/sugar ratio and flavonoid HPLC).

The concentrate also contains pectin and fruit solids. Each COA reports soluble solids, total acid, and total flavonoids; the identity is the natural hawthorn fruit concentrate spectrum, not a single volatile oil.
